Coffee of the Week: Ethiopia Sidama Amaro Gayo by Bird Rock Coffee RoastersThis week's featured coffee is Ethiopia Sidama Amaro Gayo by Bird Rock Coffee Roasters. This coffee offers an intense honey-like aroma, redolent of flowers and blueberry. In the cup, it presents a delicate balance with a soft, lightly syrupy mouthfeel, balanced acidity, and fresh flavors of ripe stone fruit, lemon, tangerine, and honeyed sweetness. The finish is clean with a quiet sweet fruit-toned chocolate in the long.
  • About the Roaster: Certified organically grown, this coffee is processed with great care by Ethiopia's only female coffee mill owner, Asnakech Thomas. She pays high prices for ripe cherry from smallholders in Ethiopia's Amaro region. This Sidamo coffee is "natural" or dry-processed, meaning the beans were dried inside the fruit, producing a lower-toned flavor profile with deeper, wine-and berry-like fruit.
